Yes, you can vacuum seal pancakes

I have a vacuum sealer. It’s a Rival sealer, by the way, which I would not recommend to anyone. It takes five to ten minutes of messing around with it, repositioning bags, wiping down seals, gaskets, etc., to get it to work. The good news is that once the vacuum sealer has unwadded its hypothetical panties, it then works perfectly.
My mom and husband expressed some skepticism at how well pancakes would do being frozen and then thawed, but I can tell you from personal experience that they do just fine. Of course, a lot probably depends on the recipe. The recipe I use (thanks, Grandmom, for making pancakes so good that appetite suppressant pills are almost a necessary side!) makes rather dense and moist pancakes, so they hold up quite well to being compressed, frozen and then slowly thawed in the microwave (half power for 2.5 minutes, then full power for one minute).
I think I want a new vacuum sealer for Christmas. In fact, I know I want a new one for Christmas. I think I’ll go for the name brand Food Saver one this time around. Any takers?
