Jenn’s awesome nachos

The other night I came down with a massive craving for Taco Bell’s volcanic nachos. But at that time our cars were buried underneath four feet of snow, much like our entire county is, and I had — and still have — pneumonia. So a quick Taco Bell run was out of the question. But raiding my fridge and pantry for the ingredients I would need to make my own version of nachos? Definitely not out of the question.

Ingredients? Nothing fancy. Just some…

  • Tortilla chips (I use the spiffy scoop ones)
  • Medium chunky salsa
  • Fiesta blend shredded cheese
  • Jalapeno peppers, sliced
  • Lettuce
  • Sour cream
  • Optional — spicy Nacho ranch dressing

Arrange your chips, pile on a generous layer of fiesta blend shredded cheese, pop in the microwave long enough to melt the cheese. Now add some salsa, then drop some jalapeno pepper slices here and there. Toss on some more cheese — you can never have too much cheese when it comes to nachos! If you’re lucky enough to have the super delicious spicy Nacho ranch dressing, add that to. Now put on some lettuce, then top with a dollop of sour cream. Congratulations, you’ve just made awesomely delicious nachos without having to leave your house!
